A sheet-pan dinner is one tray, one oven, one wash-up. Used right, it is the most efficient way to feed a UK family on a weeknight.

Recipe 1: Sausage and root veg traybake (35 min)
8 sausages (any UK butcher pack)
500g new potatoes, halved
2 red onions, wedges
1 sweet potato, cubed
2 tbsp Costack All Purpose Seasoning
2 tbsp olive oil
200°C, 35 minutes. Toss everything in oil + seasoning before the tray goes in. Sausages browned, veg crisp. Family of 4 fed.
Recipe 2: Lemon pepper salmon and broccoli (22 min)
4 salmon fillets
1 head of broccoli in florets
400g baby potatoes, halved and pre-boiled 6 minutes
1.5 tbsp Costack Lemon Pepper
1 lemon, sliced
Pre-boiled potatoes go in first at 200°C for 10 minutes. Salmon, broccoli and lemon slices added. 12 more minutes. Done.
Recipe 3: Chicken thigh and Mediterranean veg (40 min)
Chicken on top, veg below. 200°C, 40 minutes. Skin crisp. Veg saucy.
Recipe 4: Spicy chickpea, halloumi and pepper (28 min)
Vegetarian. 200°C for 28 minutes. Halloumi browned, chickpeas crisped.
Recipe 5: Pork meatball and root veg (38 min)
500g pork mince formed into 16 meatballs
2 carrots, batons
2 parsnips, batons
200g sprouts, halved
1.5 tbsp Costack Meat Seasoning
Meatballs and veg same tray. 200°C, 38 minutes.
Sheet-pan rules
Cut everything to similar size or some veg burns
Pre-boil potatoes if cooking with quicker proteins
Single layer always. Crowded trays steam, do not roast
High heat (200°C minimum). Low heat traybakes are sad
Toss with oil AND seasoning before the tray. Not separately
