Lemon Pepper Salmon Traybake (25 Minutes, One Tray)

The one-tray dinner UK home cooks should have on rotation. Salmon, baby potatoes, broccoli. One seasoning. One oven. 25 minutes.

The recipe

Serves 2. Time: 25 minutes.

  • 2 salmon fillets (180g each, skin on)
  • 400g baby potatoes, halved
  • 1 head of broccoli, in florets
  • 1 lemon, sliced
  • 1.5 tbsp Costack Lemon Pepper
  • 2 tbsp olive oil
  • Salt to taste
  • 1 garlic clove (optional)

Method

  1. Pre-boil baby potatoes in salted water for 8 minutes. Drain.
  2. Toss potatoes in 1 tbsp oil + 1 tsp lemon pepper + salt.
  3. Single layer on a baking tray. Oven 200°C, 8 minutes.
  4. Toss broccoli with 0.5 tbsp oil + 1 tsp lemon pepper.
  5. Pat salmon dry. Skin scored. Rub with 1 tbsp lemon pepper + a pinch of salt.
  6. Add broccoli to the tray. Add salmon, skin side up. Lemon slices around.
  7. Back in oven, 12 minutes. Done when salmon flakes.

Why pre-boil the potatoes

Raw baby potatoes need 35-40 minutes in the oven. Salmon needs 12. Pre-boiling for 8 minutes lets them all finish together. Otherwise, the salmon overcooks waiting for the potatoes.

Variations

  • Cod or sea bass. Same method, fish needs only 10 minutes.
  • Asparagus version. Sub broccoli for asparagus. Add at the same time as salmon.
  • Cherry tomato version. Add 200g halved cherry tomatoes with the salmon.

  • Broccoli: £1
  • Lemon: £0.30
  • Seasoning per use: £0.25

Total: £9.05. A salmon traybake at Wagamama is £18 per person. Same dish, £25 saved per dinner.

Storage

Best fresh. Leftover salmon flakes well into a salad next day with lemon mayo + capers.
