Crispy seasoned chicken wings, an air fryer favourite

Air Fryer Seasoning: What to Use on Everything (UK Guide)

The air fryer has quietly taken over the British kitchen. It now sits in roughly 61% of UK homes, and for a fast weeknight dinner most people reach for it before the oven. It is the third most-used appliance on the counter, behind only the kettle and the microwave.

Here is what nobody tells you when you unbox one. An air fryer will not fix bland food. It cooks faster and crisps harder than an oven. It does nothing for flavour. That part is still on you, and it comes down to one thing most people get wrong: air fryer seasoning.

Get the seasoning right and air fryer chicken tastes like a proper Sunday roast in eighteen minutes. Get it wrong and you have hot, dry, beige protein. This guide covers exactly what to season air fryer food with, how much to use, when to add it, and the five jars that handle every basket you will ever cook.

Why air fryer food needs seasoning more than oven food, not less

An air fryer is a small convection oven. It blasts hot, dry air around the food at high speed. That fast, dry heat is what gives you the crisp edge everyone loves. It also does two things to flavour that most home cooks never account for.

First, there is no oil bath and no pool of liquid to carry taste. A tray of oven food sits in its own juices and fat, which spread seasoning around as it cooks. Air fryer food cooks dry and fast. Whatever flavour you want has to be on the surface before the basket goes in. Nothing gets added along the way.

Second, the moving air scorches delicate seasoning. Fresh garlic, fresh herbs and sugary marinades catch and turn bitter long before chicken thighs are cooked through. This is the single most common air fryer mistake in UK kitchens, and it is why so many people quietly decide their air fryer food tastes "a bit flat".

The fix is not complicated. Use dry, granulated seasoning blends built to take heat. Apply them properly. Keep wet, sugary and fresh ingredients for the last few minutes or for the plate.

The golden rule: dry rubs beat wet marinades in an air fryer

In a conventional oven, a wet marinade works because the dish holds the liquid around the food. In an air fryer, that same marinade drips straight through the basket, smokes on the element, and leaves the food patchy and unevenly coloured.

A dry seasoning blend does the opposite. It clings to the surface, it crisps into a savoury crust, and it will not burn before the food is done. This is why a granulated blend like an all-purpose seasoning or a dedicated chicken seasoning beats a bottle of marinade every single time in an air fryer.

The method is always the same, whatever you are cooking:

  1. Pat the food dry. Moisture is the enemy of crisp. Wet food steams.
  2. Toss in a little oil. Half a tablespoon is plenty. The oil helps the seasoning stick and the surface brown.
  3. Add the dry seasoning and toss again so every piece is coated on all sides.
  4. Air fry. Add any honey, fresh garlic, cheese or sticky glaze only in the final three to four minutes.

That is the whole technique. Everything below is simply which blend to reach for.

What to season air fryer chicken with

Chicken is the most-cooked food in the UK air fryer, with around 10,100 searches a month for air fryer chicken alone. It is also the most forgiving cut to cook, which means there is no excuse for it tasting of nothing.

For wings, thighs and drumsticks, reach for a proper chicken blend. Costack Chicken & Turkey Seasoning is built on whole-leaf thyme, granulated garlic, granulated onion and paprika, all of which hold up to fast convection heat instead of scorching. Use one teaspoon per portion, toss with half a tablespoon of oil, and air fry at 200°C. Wings take about sixteen to eighteen minutes, thighs about twenty, turning once.

For chicken breast, which dries out fastest, season a little harder and finish with fat. One teaspoon of Costack All Purpose Seasoning per breast, a brush of oil, 180°C for twelve to fourteen minutes, then a knob of garlic butter the second it comes out. The butter melts into the crust and puts back the moisture the fast heat pulls out.

Want the Nando's-style hit at home? Mix a chicken blend with a teaspoon of smoked paprika and a pinch of Costack Cameroon Pepper. You get the peri-peri profile without a £6 bottle of sauce. For the full breakdown of doses and timings, see our guide on how to season chicken.

What to season air fryer chips, roast potatoes and jacket potatoes with

Chips are the single most-searched air fryer food in Britain, ahead of chicken. Most people cook them naked, with nothing but a shake of salt at the end. That is a wasted basket.

Toss raw chips or potato chunks in half a tablespoon of oil and a teaspoon of Costack All Purpose Seasoning before they go in. The granulated garlic and paprika crisp into the surface and you get chip-shop flavour without the chip shop. Air fry at 200°C, shaking the basket twice so they colour evenly.

For roast potatoes, the same blend works, plus a pinch of Costack Thyme Leaves. For jacket potatoes, rub the skin with oil and all-purpose seasoning before air frying. The skin turns crisp and savoury instead of leathery, and you have done it in half the time an oven would take.

Air fryer fish and salmon

Fish cooks in minutes in an air fryer, which means seasoning has to land fast and land hard. A salmon fillet has very little time on the heat to take on flavour, so the surface has to be doing the work from the start.

Costack Lemon Pepper is the easiest win here. It does the job of seasoning, salt and lemon in one shake, and the dried citrus will not scorch the way fresh lemon slices do. One teaspoon per fillet, light oil, 200°C for eight to ten minutes. For white fish, cod, or a fishcake, use a dedicated Costack Fish Seasoning instead, which leans more savoury than citrus. More on doses in our salmon seasoning guide.

Air fryer vegetables

The air fryer turned vegetables from the side nobody finishes into something people actually ask for seconds of. Seasoning is the whole difference.

Toss broccoli, cauliflower, carrots, peppers or sprouts in oil and Costack All Purpose Seasoning. For a bolder tray, add smoked paprika, or give it a curried edge with a teaspoon of Costack Curry Powder. Hard vegetables take twelve to fifteen minutes at 200°C, softer ones eight to ten. Season before, never after, so the spice crisps onto the surface instead of sitting on top as dust.

The 5 air fryer seasonings every UK kitchen should own

You do not need thirty jars. You need five that cover every basket you will ever load.

  1. All Purpose Seasoning — chips, potatoes, vegetables, eggs. The everyday workhorse.
  2. Chicken & Turkey Seasoning — wings, thighs, breast, whole birds.
  3. Lemon Pepper — salmon, white fish, prawns, chicken.
  4. Meat Seasoning — steak, burgers, lamb, pork, sausages.
  5. Fish Seasoning — cod, fishcakes, anything from the sea that is not salmon.

Buy them one at a time and it adds up. The No-Fuss Flavour Everyday Kitchen Kit bundles the core blends for £40, which also clears the free UK delivery threshold. It is the fastest way to set an air fryer kitchen up properly in a single order.

5 air fryer seasoning mistakes to avoid

  • Seasoning after cooking. Dry heat needs the spice on before, so it crisps into the surface. A finishing pinch of salt is fine. The flavour layer is not.
  • Using fresh garlic in the basket. It burns and turns bitter. Use granulated garlic or a blend that contains it.
  • Wet, sugary marinades from the start. They drip, smoke and char. Brush any glaze on in the last three minutes only.
  • Overcrowding the basket. Food steams instead of crisping, and the seasoning goes patchy. Cook in batches.
  • Skipping the oil. A little oil is what makes dry seasoning stick and the surface brown. Bone dry food stays pale.

Air fryer seasoning FAQ

Can you use normal seasoning in an air fryer?
Yes. Dry, granulated blends work best because they will not burn in fast convection heat. Avoid fresh herbs and sugary marinades until the final few minutes of cooking.

Do you season air fryer food before or after cooking?
Before. Apply dry seasoning with a little oil so it crisps into the surface. A finishing pinch of salt after is fine, but the main flavour layer has to go on first.

Why does my air fryer food taste bland?
Almost always under-seasoning, seasoning too late, or no oil to help it stick. Air fryer food needs as much seasoning as oven food, applied before it cooks. For a full rescue method, read how to fix bland food in 60 seconds.

What is the best all-round air fryer seasoning?
A good all-purpose blend covers chicken, chips, potatoes and vegetables. Add a dedicated chicken blend and a fish blend and you have every basket in the house covered.

Where to start

An air fryer gets you crisp and fast. Seasoning gets you flavour. Treat the two as separate jobs and your weeknight dinners stop tasting like the appliance did all the work and you just pressed a button.

Start with one all-purpose blend, master the toss-oil-season-cook method, and build from there. Or skip the slow build and get the five core blends in one box, ready for every basket from day one.
