- 800g cooked rice (ideally cold, day-old)
- 2 tbsp Costack Fried Rice Seasoning
- 3 tbsp vegetable oil
- 2 eggs, beaten
- 1 onion, finely diced
- 3 garlic cloves, minced
- 200g mixed vegetables (peas, sweetcorn, carrot, spring onion)

The 3 rules of proper fried rice
Rule 1: Cold rice
Fresh hot rice is sticky and clumps. Cold rice has dried out enough for the grains to separate. Cook the rice the day before. If you must do it same-day, spread fresh cooked rice on a tray and refrigerate uncovered for 30 minutes minimum.
Rule 2: Ripping hot pan
A medium-heat pan steams the rice. A smoking-hot pan dries the surface of each grain and gives you that proper toasted, savoury finish. Use the largest pan you own. Heat for 90 seconds before adding oil.
Rule 3: Real seasoning, not just soy

Method (20 minutes)
- Heat 1 tbsp oil in a large wok or frying pan over high heat until smoking.
- Add beaten eggs. Stir to scramble for 30 seconds. Remove and set aside.

Variations
- Egg fried rice: skip the protein. Double the eggs to 4.
