Sticky BBQ Wings (The Recipe That Beats Every Chain)

A great BBQ wing has three layers. A dry rub for crust. A sticky glaze for sauce. A finishing touch for shine.

This recipe nails all three in 35 minutes, in a domestic UK oven, without a smoker or a deep-fat fryer.

The recipe

Serves 3-4 as a main, 6 as a starter. Time: 35 minutes.

For the wings:

For the glaze:

  • 4 tbsp ketchup
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp honey
  • 1 tsp Costack Cameroon Pepper (or chilli flakes)
  • 1 tbsp apple cider vinegar
  • 1 grated garlic clove

Method

  1. Pat wings completely dry with kitchen roll. Critical step.
  2. Toss with seasoning, brown sugar, salt, baking powder. Coat evenly.
  3. Lay on a wire rack over a baking tray. Single layer.
  4. 200°C oven, 25 minutes. Skin should be golden and starting to crisp.
  5. Meanwhile, simmer all glaze ingredients in a saucepan for 4 minutes. Sticky and shiny.
  6. Pull wings out. Toss in half the glaze. Back in the oven, 8 more minutes.
  7. Pull out, toss in remaining glaze, sprinkle of fresh spring onions. Eat.

Why baking powder matters

Baking powder raises the pH of the chicken skin, which encourages browning and crispness. It is the single trick that separates okay home wings from restaurant wings. Half a teaspoon per kilo is enough.

Make-ahead version

The dry-rubbed wings can sit in the fridge for up to 6 hours before cooking. Skin gets even crispier. The glaze can be made 3 days ahead and kept in a jar.

Variations

  • Lemon pepper version. Sub seasoning for Costack Lemon Pepper. Skip the BBQ glaze. Toss in melted butter + lemon at the end.
  • Suya peanut version. Sub seasoning for Costack Suya Spice Mix. Smoky, peanut-rich, beats every supermarket BBQ rub.
